Yummy Fruit Cake Recipe


12oz self raising flour
1 1/2 teasp mixed spice
7 1/2oz dark brown sugar
7 1/2oz margarine
3 large eggs
18oz mixed fruit nuts and cherries (chopped)
2 fl oz brandy & 5 fl oz milk mixed together
Demerara sugar for sprinkling


Place all the ingredients in a large bowl, beat together with a wooden spoon until well mixed.
Place into a lined round 8″ cake tin and smooth the top.
Sprinkle with demerara sugar
Bake at 325F 160C / Gas mark 3 for 2 – 21/2 hours until cake feels firm when pressed or skewer comes out clean.

Add some green cherries to make it look extra special!!
